Delicious Donuts! Free-From!

I hope you have a had a lovely relaxing week! ? We’ve all watched far to much television and generally had a lazy time (hooray! for once!) Okay, so our fridge broke and we had to take it all to pieces as well as having food in bowls of ice on every surface in the kitchen, but other than that… it was all relaxed! 😛 😀

We’ve had guests and more guests and cooked and eaten and cooked and eaten so these were something quick I whipped up… for me for breakfast!!! Yes… donuts for breakfast! We don’t judge at pancakes for breakfast, so why donuts? Yes, I know I’ve posted donuts before but this is a different recipe and is even more scrumptious! 😀

Next time I publish a post, it will more than likely be NEXT YEAR! Wow! Where did 2016 go! 😛 Do you have a plan for 2017 yet? Even if it is just one thing you want to achieve… like making healthier donuts like these! 😀 Seriously though, a new year usually brings new beginnings and if you realise you didn’t achieve your 2016 goals… don’t stress, just rewrite them for 2017! 😀

Delicious Donuts (Vegan & Free-From)

  • Servings: 30-40 mini donuts
  • Difficulty: easy

Gather

  • 2 tablespoons chia seeds
  • 6 tablespoons water
  • 150g oat flour (oats blitzed to a flour) GF if required
  • 75g rice flour
  • 50g cassava flour
  • 1 teaspoon baking powder
  • 300ml milk (or half milk and water)
  • 100g banana pureed
  • 50ml maple syrup
  • *optional coconut oil, cinnamon and coconut sugar

Prepare

  1. Put the chia seeds in a cup, add the water and stir well. Set aside for 5 minutes until they form a gel.
  2. Combine the oat flour, rice flour and cassava flours with the baking powder.
  3. Either by hand or in a blender, stir in the milk, banana and maple syrup. Mix well.
  4. Pour into a donut machine and wait for fluffy donuts! If you don’t have a donut machine, cook on a low heat in a shallow frying pan using egg rings or pastry cutters as your mould.
  5. *Optional – melt the coconut oil and dip a donut in to coat it. Dip in the cinnamon and sugar.
  6. Enjoy!

Serve & Store

  • Eat as they are – for breakfast, snack or dessert.
  • Coat in sugar and spice (see optional step)
  • Drizzle with melted chocolate
  • Serve with fresh fruits (and chocolate)!
  • Ideally eat fresh but otherwise store covered for up to two days (they will slightly harden but will soften on gentle heating)
