E = Easy Eggfree Dessert! (dairy free & gluten free too)!

Hello and welcome back to my A-Z challenge! Today was a bit of a tricky one to think of, with only eggplant and endive springing to mind (and not my mind either)! 😛

Anyway, I was playing with some ingredients and suddenly this idea jumped out at me! I know! Most All of my recipes are egg free so why a special post? Well, it’s still Easter weekend and traditionally it is therefore a time to be eating eggs! chocolate eggs to be precise! Not wanting anyone to feel left out and being as I love making DEGF foods, this seemed an ideal time to test something new! As I’d already posted hot cross buns and chocolates, I thought why not make a pudding! and OMGosh this! This ‘is’ a pudding! It was ready before I’d had breakfast so it became breakfast (because it’s healthy)! then I decided I was making something from another blog and while they were setting I just had to eat another slice! This has to be my favourite ‘free from’ dessert to date! I ate it as it was, but I can imagine it would be great with a custard, cream or ice cream 🙂 This is also a very easy recipe once you’ve soaked the oats for several hours (or overnight) as you literally just mix it all together! 🙂

Gather

  • 100g porridge oats (GF if required)
  • 200g unsweetened apple puree
  • 1/4 teaspoon cinnamon
  • 30g date syrup
  • 1 teaspoon baking powder
  • 150ml unsweetened carton coconut milk
  • 1/4 teaspoon xanthan gum
  • 15 (or so) almonds to decorate
  • Sprinkle of coconut sugar

Prepare

  1. Mix the oats with the apple puree, level, cover and leave in the fridge for at least two hours (overnight is great).
  2. Add the cinnamon, date syrup, baking powder, milk and xanthan gum to the soaked oats

    and mix well to combine thoroughly.

  3. Pour into a greased dish (mine was 17cm) and level the top.
  4. Decorate with the almonds, lightly pressing them into the batter.
  5. Sprinkle with coconut sugar

    and bake at Gas 4 (350f / 180c) for 35-40 minutes.

  6. Leave to cool for 15-20 minutes before removing and cooling on a wire rack.
  7. Slice and serve!
  8. Enjoy!

Serve & Store

  • I can’t think of anything to compare this to as the texture is between a cake and a pudding! So, you can eat it as it is or add custard, cream or ice cream!
  • Its great warm but equally yummy cold!
  • You might want to hide it so that there’s some left for you as this is sure to go walkabout!
  • Store covered for 4-5 days (if you can resist it for that long!)

    Apples, cinnamon, dates, coconut milk, almonds… sounds like a beautiful mix for a great breakfast or tea time snack. Add cream, chocolate layer and there you have a dessert! Love how versatile this recipe is! 🙂

      Milica 🙂 I kind of had the munchies last night and almost finished this off! 😛 It is most certainly something to make again and play with… maybe a chocolate version 🙂 ooo… or your coconut base mix from your raw cupcakes on top now that would be amazing! 🙂

        Hahah, those munchies can really be tough! I really like the idea of chocolate version and probably the raw coconut layer would work as well! For the weekend I made some not-so-presentable cupcakes and was feeling bad they didn’t turn out the way I wanted to, but I still kept munching them. Ooooops! 🙂
