crispy squares

4 ingredient easy Halloween snack with marshmallow and chocolate

Crispy Squares.

Sometimes a little bit of reminiscing is a great thing! When I was younger, we used to make all kinds of sweet foods. One of my favourites that my late Mum used to make was a crispy chocolate cereal base topped with angel delight. Apt for this time of year, it was usually a green topping (mint flavoured), then topped with chocolate shavings. Feel free to try that if you wish, but I’ve adapted the recipe to make it finger and lunchbox friendly!

Chocolate Crispy Squares

The Marshmallow crispy square recipe

This recipe only has 4 ingredients! Simple! You need butter, chocolate, marshmallows and crispy cereal. I used coco pops, but rice crispies, or other rice or chocolate puffed rice should work just as well. You can leave the tops plain, or make marshmallow faces, sprinkle with coconut, ground nuts or even sprinkles. You could change the chocolate and use white, or flavoured such as orange, or a mixture. Hint, this is a great recipe for using up all those odd bits of chocolate laying around!

Gather
  • 30 g butter
  • 30 g marshmallows
  • 30 g chocolate
  • 50 g coco pops (or other popped rice cereal)
  • 70-100 g chocolate for topping
  • extra marshmallows for decoration
Prepare
  1. Prepare your tin. This amount will make half a square brownie tin, or a small loaf tin size. If using silicon, your tin should be fine. If using metal, you probably want to line it with baking paper first.

  2. In a small saucepan, over a low heat, stir the butter, marshmallows and chocolate together until melted. Turn the heat off.

  3. Stir the cereal in and mix well. Immediately tip into your tin and press down with a palette knife or the back of a metal spoon.

  4. If doing a chocolate topping, break the rest of the chocolate into small chunks and melt either in 20 second bursts in the microwave, or over a pan of boiling water. Tip the chocolate over the crispy mix and level or smooth out..

  5. If adding toppings, pop them on before the chocolate sets.

  6. Place in the fridge to set completely, then carefully cut into squares (or triangles)!

  7. Enjoy!

Storage

These do store quite well, if you can stop then all being eaten in one sitting! You can store them in the fridge for up to five days or on the worktop in an airtight container. Note if storing in the fridge, you might get some condensation on the chocolate when bringing them to room temperature.
