5 Easy Summer Salads

When the weather is heating up, cooking is generally the last thing on your mind – who wants to slave away in the kitchen when the sun is shining?! So, light the barbeque, skewer some veg, marinate some tofu (or meat/ fish/ chicken) and prepare these 5 easy summer salads to go with your meal!

Salad that goes with everything!

The simplest and tastiest salad you can make is tiny diced tomato and cucumber! You might think that is too simple and boring, but when that fresh tomato juice mingles with the cucumber, this is the perfect salad! Add a sprinkle of salt and pepper, maybe a squeeze of lemon juice and a splash of olive oil and this goes from simple to amazing! Add a bit of diced red onion, throw in a few black olives, even add some diced pepper or carrot and this just became your favourite salad too!

A more substantial easy summer salad

If you need a bit more substance in your salad, you can always add your favourite beans, or chickpeas (or both) to it. Why not try this Summer Bean Salad.

Coleslaw… because cabbage is best in salad!

Coleslaw is one of those foods that we make all the time! It goes great with most things, whether it’s the barbecue, a sandwiches or especially with potatoes. This recipe uses yogurt instead of mayonnaise and you will have people asking for the recipe! We’ve made it with coconut yogurt (the best), oat yogurt (that was new this week) and soya yogurt. Just adjust the seasoning to your type of yogurt!

Potato Salad

Potato salad is not something we make very often, as we are often eating hot potatoes! We love baked potatoes, potato wedges, baked mini new potatoes in their skins and most other types of potatoes (yes, including chips)! That said, lots of people do love potato salad, and this one is great with a barbecue, picnic or buffet.

A different summer salad

If you have never tried spiralising your vegetables, you need to try it! The taste is so different from just chopping it up! I even got veg-hating children to eat this dish! This is courgetti, or zoodles (depends which country you are in)! mixed with pesto, and it is so delicious as a side or even a main dish!

What do I need?

You can (as with most of our recipes), make any of these salads as simple or as complicated as you like! You can add extra ingredients, remove or change foods to suit your preferences and add more or less spices to make it personal to you and your family and friends.     So, the weather is finally heating up again over there? Lovely salads as ever. Have you heard of aquafaba mayo? (that just got autocorrected to ‘sausages’ somehow!). Anyway, saw a video on it the other day- apparently it tastes no different to egg-based mayo. Enjoy the sun this weekend ☺

      Hello Eva. Thank you! Yes, we have 24c here today and the rain has gone! I have a jar of aquafaba in the fridge ready for mayo (or marshmallows!) So glad the school holidays start on Thursday!!! Hopefully I might have more time then! What are you both up to this weekend?

      Ooo, love me some Dorito’s! 😛 I’m going to make some tortilla chips… I’m thinking marmite flavour! Although today is a trial and error making some vegan ‘meat’ day! Have a fantastic weekend!
