It’s Macmillan Coffee Morning Day! Let’s have cake! πŸ™‚

Now, coffee cake is a bit of a confusing one! To me a coffee cake is a cake flavoured with coffee! πŸ˜€ Coffee in the cake and coffee in the icing equals coffee cake! However, I’ve realised that coffee cake to to others is any cake you have with coffee!? Well, I don’t get that?! Well, I thought I didn’t… but what is a tea cake?! πŸ˜› Okay, I’m not going there! (note to self make a tea cake with tea)! πŸ˜›

Anyway, I’m not really a cake person! Crumble yes! Biscuits yes! Cheesecake yes! Banoffee pie yes! Cake no! Well, unless it is a coffee cake! Coffee cake has always been my go to cake! My favourite cake! The only cake I could be tempted by! So of course, it goes without saying that I would make a coffee cake for my coffee morning! πŸ˜›

All ready for Macmillan Coffee Morning!

This cake had a couple of trials and turned out fantastic! I’m waiting to see how many guests realise that it is vegan! The boys didn’t seem to notice! πŸ˜› Yay! You can of course leave this cake plain and un-iced if sugary icing is not your thing or, fill it and top it with a coffee flavoured buttercream… and walnuts (or pecans) if you so wish!

Gather
  • 3 teaspoons instant coffee
  • 60 ml boiling water
  • 380 ml milk (we used oatly)
  • 100 ml natural yogurt (we used soya)
  • 2 teaspoons apple cider vinegar
  • 100 g butter
  • 300 g sugar
  • 2 teaspoons vanilla extract
  • 480 g plain flour
  • 6 teaspoons baking powder
  • 1.5 teaspoons bicarbonate of soda
  • pinch of salt
  • For the Buttercream: 100g butter, 225g icing sugar, 2 teaspoons instant coffee in 2 teaspoons boiling water.
Prepare
  1. Put the coffee in a small cup and add boiling water. Mix well to dissolve coffee and set aside.

  2. Mix the milk with the yogurt in a large bowl and add the apple cider vinegar. Mix well and set aside to start curdling.

  3. Cream the butter and the sugar, then add the vanilla. Whisk this into the yogurt mixture with the coffee.

  4. Sieve in the flour with the baking powder, bicarbonate of soda and salt. Gently fold in until combined.

  5. Pour into a lined baking tin and bake at Gas Mark 4 (350f / 180c) for 45-50 minutes. Remove from the tin and allow to cool.

  6. If you are icing the cakes, allow them to cool completely. Mix the butter with the icing until you have a smooth buttercream, then mix the dissolved coffee in. Put half on both cakes, then sandwich together. Dust with cocoa, chocolate shavings or decorate with walnuts or pecans.

  7. Enjoy!

    Wow, this looks amazing and I’m not a massive cake fan either…apart from lemon drizzle and coffee cake of course! This takes me back around ten years ago when I sat in a (thankfully) near empty train carriage on the way back home, eating the leftovers of a colleague’s coffee & walnut birthday cake they had bought from Waitrose lol?       Thank you Eva! πŸ™‚ The icing is a bit too sweet for me but with black coffee it was good! πŸ˜› I was impressed with the recipe though – definitely a keeper and one to play with with other flavours! Hopefully a bit of a quiet weekend this week! Anything planned for you this weekend?

    Yeah, icing is usually a bit too sweet for me too- I would add lots of black coffee as well lol. The cake looks great for special occasions, definitely a keeper like you say. This is going to sound random but do you remember ‘Romeo’ biscuits/cookies from the 80s? They were basically Oreos but the filling was like a chocolate icing. Anyway, I digress as usual. This week I’m doing a bit of packing and gift buying…we’re going to Italy this week for hubby’s aunt’s 80th birthday celebrations. It’s been a year of milestone birthdays for us! Another long drive for hubby but he doesn’t seem to mind. I hope you’ve had a well-deserved relaxing weekend. My boss just texted me about doing a sports massage tomorrow (not my fave?much prefer a gentle aromatherapy one?) x

      Romeo sounds more like current English homework! Just come to my laptop and there are Juliet quotes all over my screen lol! I don’t recall those biscuits – but then I think we used to have big tins of assortments being 5 of us, rather than individual packets (apart from digestives)! Oh gosh, lots of driving but I’m guessing some lovely scenery on the way! Oh, regarding the cake, the more I eat, the less sweet it is! πŸ˜› I’m hoping everything will be finished off today as I’ve been picking at the cakes and cookies all weekend! Have a great week! x
