Oaty Digestive Biscuits

Biscuits! 🙂 Cookies! 🙂 Whatever you call them these are yummy! 😀

These are soft and chewy biscuits which go perfectly with a cup of tea! As they contain oats you feel more satisfied after eating them and therefore just one or two is enough to feed that sweet craving (she says 😛 !)

Healthier style cookies full of taste!

The recipe is very simple and you could easily pop a few extras in there – chocolate chips or nut chunks would be great, maybe raisins or chopped dried apricots would make great cookies too. 🙂

You could also change the flavour totally by using cinnamon, mixed spice, cardamon or nutmeg or add a spoonful of cocoa powder. Ahhh, now I want to get baking to make a whole selection of cookies! 🙂

Oaty Digestive Biscuits

A healthier version of a digestive biscuit, perfect for a quick snack, dunking in a mug of tea or even for breakfast!

Gather
  • 30 g sugar (granulated or caster)
  • 30 g butter (we used Vitalite)
  • 1 medium banana mashed
  • 65 g oats
  • 55 g plain flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon ground ginger
Prepare
  1. Cream the sugar and the butter together until you have a smooth creamy mixture.

  2. Beat the banana in, then add the oats, flour, baking powder and ginger.

  3. Gently mix until combined, then spoon 12 walnut-sized balls onto a lined baking sheet (space apart as they will spread). Gently press down to make them a bit flatter.

  4. Bake at Gas Mark 4 (350f / 180c) for 12-15 minutes. They should be lightly golden on top and starting to brown around the edges. Allow to cool for a few minutes on the baking tray before moving to a cooling rack.

  5. If you wish you can drizzle chocolate over the top once cooled for extra yumminess! 🙂

  6. Store covered (a plate with kitchen roll on top is fine) for up to 5 days.

  7. Enjoy! 🙂


When these are cooking, the mixture will spread, but you can help them along by gently pressing the mixture down (especially if you want a more uniform shape).

Spread the cookies out and put walnut-sized balls on the tray.
Gently flatten before baking (make sure there is still space around them).
nom nom nom!

    Hi Laurena, there’s nothing better than a cuppa and a biccie, even better if it’s a slightly more ‘virtuous’ one like this recipe lol. I’ll make mine with mixed spice and raisins. Enjoy the rest of the weekend☺
