Lentils

Lentils are one of those great vegan foods which are incredibly versatile and contain plenty of protein as well as dietary fibre, iron, manganese, copper, Vitamin B-6, magnesium and also Vitamin-C and calcium! Most lentils can be cooked from dried (unlike dried beans which need soaking overnight), and although not an instant meal, they are definitely a comforting and filling one. We find the easiest lentils to use are split red lentils and you can add a handful to a soup, casserole, stew, pie filling, burger mix or loaf mix to thicken it and add protein and texture.
