Sorry!!! and a lovely vegan speedy dinner!

OMGosh! Sorry everyone! I’ve never left you for that long! 🙁 It’s been almost a week since my last post and you wouldn’t believe how so VERY busy I’ve been! I’ve not even had a second to check emails this week! and unfortunately for the next few months I will only get busier! 🙁 Thursdays thru Sundays I will have ‘some’ spare time although getting the odd half an hour relaxing in is of course priority for my health (& sanity)! Anyway, not much cooking and no baking happening from me but thankfully hubby has been keeping me fed! 🙂

Just very quickly as I still have no time… whoever would think of combining aubergine with chickpeas? Not something I’d ever eaten before but this concoction (thank you hubby) was delicious! 🙂 A recipe? Hmmm well, let me see! Salt the aubergines, pat dry, chop them up, pan roast them in coconut oil. Add a tin of drained chickpeas, add salt, ground black pepper, a teaspoon of mixed curry powder and a sprinkling of paprika. Cook for 5-10 minutes then add chopped baby sweetcorn and sliced red pepper and continue cooking for a further five minutes. Eat on its own or with your favourite grain, you could even add some salad and put this in a wrap! Delicious! 🙂

    Mmmm, best meals are the ones prepared fast, through it all in and you’re done! 🙂 Flavor combos are endless and it is almost effortless! I’m glad to see hubby taking good care of you 😉

          Yummy! 🙂 I had a tomato and kidney bean soup which hubby made! 🙂 nomnom! Definitely soup weather in UK again 🙁
