Sticky Toffee Pudding

My Dad loved hot desserts and sticky toffee pudding was one he would often choose. If you read my blog last week, you will know that my Dad has recently passed away. This recipe is one I’ve tweaked slightly from the last sticky toffee pudding I made my Dad but one I’m sure you’ll agree that everyone will love.

Most hot puddings remind me of my Dad, like this apple crumble slice or creamy rice pudding , even these baked apples which remind me of time spent picking and storing apples with Dad. In this freezing cold weather which has suddenly descended on the UK, these hot puddings are a comfort in more ways than one.

More than the usual dusting of snow!

If you want a stickier or stodgier pudding, just make a thinner runnier syrup and make sure you pour it over the puddings as they come out of the oven. If you like a lighter pudding then follow the recipe as it is and go easy on the sauce.

We’ve spent the past dozen days reminiscing, sharing stories, looking at photos and re-watching family video clips. There is still disbelief that this wonderful man left us suddenly without notice, but also relief that he didn’t suffer more than necessary. I guess with time it will become easier, less painful, without so many constant reminders, but for now he is in our thoughts every minute. Have you ever lost someone close to you that you loved? Sticky Toffee Pudding (Vegan & Free-From)

  • Servings: 9 mini puddings
  • Difficulty: medium

Gather

  • 100ml aquafaba
  • 2 teaspoons apple cider vinegar
  • 75g coconut sugar
  • 65g soft dates (destoned)
  • 50g coconut oil melted and cooled
  • 100ml coconut milk
  • 1/2 teaspoon vanilla
  • 150g flour (gluten free if required)
  • 50g brown rice flour
  • 50g ground almonds
  • 2 teaspoons baking powder
  • 1 tablespoon ground linseeds
  • pinch of cloves
  • 1/2 teaspoon ginger
  • 1 teaspoon mixed spice
  • 1/2 teaspoon Maldon sea salt
  • 20g dates finely chopped
  • 20g coconut nectar
  • 300g (vegan) condensed milk

Prepare

  1. Whisk the aquafaba until soft peaks appear. Add the apple cider vinegar and continue whisking until stiff peaks form (mixture should stay on whisk when lifted).
  2. Add the coconut sugar and whisk until combined.
  3. Blend the dates with the oil, milk and vanilla until you have a smooth paste. Add this to the aquafaba mix and gently mix in.
  4. Mix the flours, almonds, baking powder, linseeds, spices and salt together then lightly fold into the batter.
  5. Dot the batter with the chopped dates and drizzle with coconut nectar.
  6. Spoon the batter into prepared muffin tins (I made 9) and bake at Gas Mark 5 (375f / 190c) for 20-25 minutes.
  7. Remove from the tins and place on serving plates.
  8. Using a fork or a skewer, poke several holes into each cake.
  9. Gently heat the condensed milk until just changing colour, then pour over the puddings.
  10. Enjoy!

Tips & Storage

  • You can add more chopped dates or coconut nectar if you want a richer cake.
  • Use your favourite toffee or caramel sauce recipe.
  • Thin the condensed milk with some milk or water for a thinner sauce.
  • Serve with custard, ice-cream or cream.
  • Change the spices – omit the ginger and use cinnamon instead.
  • Store the muffins without the sauce in a covered container.

        It’s getting there! It isn’t until you move that you realise how much stuff you have, and how much of it you don’t even use or have totally forgotten about. Then there’s going through the sentimental things and deciding what to keep… Of course all this is just first world problems and not that important in the grand scheme of things as you will know. Hope you and your family have fun in the snow in your Dad’s honour?xx

          It’s amazing how much stuff we accumulate – we’ve taken to photographing things and storing them on a hard drive! 🙂 I wish I’d helped my Dad sort through his sheds (yes plural)! more – we’ve got so much to sort! xxx

    So sorry to hear of your Dad’s passing. It can’t be easy, but doing what you are doing is the best way to overcome grief. Making this pudding in your dad’s memory had to have been satisfying. I love sticky toffee pudding, and I just love the way you’ve put such a healthy spin on it.

    p.s. love that first picture with the snow…..is that a forsythia bush? I hear my family telling me that it has been pretty bad in most parts of England there this week. Here, we are enjoying real mild temps for February, it’s unbelievable. But then we had our share of snow and ice in December and January.

I’ve no idea what the bush is and short of digging in the snow to find the name tag I’m none the wiser! 😛 We don’t often get the bad weather where we are, but over 250 of our local schools are closed today! I don’t recall it being this cold here – minus five is new to us! You looked like you had glorious weather on holiday! 😀 x

        Gorgeous trip yes, love all the different adventures and mixing in with the locals and even cooking with them. I will have 2 blog posts of it. I’ve been negligent with the blog lately, its always hard to get back on track when one has been away, but I’m really trying. No expert in the gardening area, just love gardening. It looks like there’s more snow coming your way. We’ve got temps in the upper teens, pretty unusual for February, so everything is beginning to pop up here and there. Hubby and I are just about to leave to go on a long hike, it just gorgeous outdoors.

          Brrrrr! I couldn’t even imagine going out it’s too wet, cold and snowy here… the snow has just started up again! You were very fortunate to be invited to a locals house for cooking – what fun and a great way to see real traditions and culture. I beg to differ about your expertise in gardening though! I know you volunteer weekly, have judged at least one plant contest and I’m certain it was you who took some type of gardening type course a few years ago! 😛 So, an expert you will always be in my eyes! 😀 x

          I’m getting better thanks. It will already be two weeks on Friday since my Dad died and although every day brings new challenges it is getting easier the more I talk about him.

    Laurena, I am so sorry for your loss – a “dad” is a special man in our lives. What a great way to remember him by making this toffee pudding. I just love toffee and of course your recipe has a healthy twist to it. Have a good week – they say time heals but it’s the memories we hold onto.
