Summer Bean Salad

Is it salad weather where you are? There’s not much cooking going on here as the weather is so lovely it’s a bit too warm to eat anything much! Of course, we still need to eat, so salads are the way to go!

I recall Jhuls @thenotsocreativecook previously saying she doesn’t eat salads! Well, this is definitely not a limp lettuce and tomato salad, oh no! This is a substantial protein packed salad with a spicy salty sweet dressing! Oh yes indeed! As always, you can play with the ingredients to suit your budget, tastes or pantry! 😀 The dressing you should try and get as close to as possible, but as always there are subs you can make! 🙂

Summer Bean Salad

A protein packed salad great for the warmer weather. The dressing makes this salad sing – make sure you add it to get the best flavours!

Gather
  • 1 tin mixed beans rinsed and drained (or sub any beans)
  • 1 tin chickpeas rinsed and drained (or sub another bean)
  • 1/2 medium cucumber diced
  • 1 medium orange pepper diced (or sub any sweet pepper)
  • 2-3 spring onion greens thinly chopped (green tops only)
  • 5 medium cherry tomatoes cut in half then quarters
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 teaspoon paprika
  • 1/4-1/2 teaspoon salt (to taste)
  • 1 teaspoon brown rice vinegar (or sub apple cider vinegar)
  • 1/2 teaspoon balsamic vinegar
  • 1/2 teaspoon Worcester sauce (vegan) (or sub soy/tamari)
  • 1/2 medium lime juiced (approx 1 tablespoon) (or sub lemon juice)
  • 1 cm green chilli diced
Prepare
  1. Put the beans, chickpeas, cucumber, pepper and spring onion in a large bowl and gently mix together. Add the tomatoes and gently mix through.

  2. Sprinkle over the pepper, paprika and salt, the carefully fold through. Transfer to a serving bowl.

  3. Mix the rice vinegar, balsamic, Worcester sauce and lime juice together and add the chilli.

  4. Just before serving, pour the dressing over the salad.

  5. Enjoy!


You can of course just eat this salad as it is for a main meal, or you could add it to a selection of other salads, maybe as part of a barbecue. Everyone loves this coleslaw and there’s always someone asking for the recipe! My favourite is this Turkish shepherds salad and of course, for you potato fans, there is a potato salad too! I have a thing for lettuce wraps at the minute, so I’ll be loading my bean salad into firm and crunchy little gem or romaine lettuce leaves. Yummy! 😛 Perfect Summer picnic food! 😀

    We have had the coldest weather – so strange for August. I’t been down in the 50s F at night. This looks like a salad hearty enough fo r a hot summer meal but with enough heft to carry into fall! Loe it!!
