Try mushrooms to easily make the most delicious Vegan Burger

Vegan Burgers.

The great thing about vegan burgers is the fact that you can use almost any ingredient and create something which resembles a burger. Usually, I would use a tofu, bean or chickpea base to bind my ingredients together, this time I have used oats.

Mushrooms are a great ‘meaty’ substitute and I often chop a handful, fry them and add to a burger, or even use large whole mushrooms as a bun. This is the first time I have made a burger out of mushrooms! Why? Well, I was given 2.5kg of mushrooms and needed something other than mushroom stroganoff to use them for!

The Mushroom Burger Recipe

Guess what?! Yes, you need mushrooms! Any type will do! Chestnut, button, field, closed cap, white or any others you may have. They can be fresh or slightly looking like they need using up! Wipe them, or peel them, whichever you usually do, then chop them into small pieces. You need some spice, black pepper and garlic for sure, then chilli flakes if you like spice, and a nice herb mix like Italian herbs. I’ve added nutritional yeast for an extra vitamin boost and a bit of extra flavour, then you need a binder. I have used oat flour, but you could use whole oats or plain or gluten free flour too.

Gather
  • 500 g Mushrooms (diced)
  • 1 teaspoon garlic granules (or sub 2 cloves finely diced)
  • 1 teaspoon onion granules (or sub 1/2 small onion finely diced)
  • 2 tablespoons Nutritional yeast (optional)
  • 1/4 teaspoon Black pepper
  • 1 teaspoon Italian herbs
  • 1/2 teaspoon Red chilli flakes (optional – if you like it spicy)
  • splash of Oil of choice for cooking
  • 3-4 tablespoons Oat flour (or sub whole oats, or flour)
  • pinch of Salt if required
Prepare
  1. Put the mushrooms in a non-stick pan and cook until starting to brown (if you have a pan which needs oil, add a bit of oil first, and cook the mushrooms in the oil).

  2. Add in the garlic and onion granules and stir through (if using fresh, allow to cook through).

  3. If using nutritional yeast, add this, followed by the black pepper and herbs (& chilli & salt if using). Mix in well and allow to cook for a couple of minutes, then do a taste test and adjust seasonings if required.

  4. Check for liquid content – the mushrooms will release water as they are cooking, and you need the mixture to be free from excess moisture. Add your oat flour a bit at a time and mix in. The mixture should start to come together into a ball. Turn the heat off. Allow to cool slightly.

  5. Divide the mixture into 4 and using your hands, shape into rough patty shapes. Either, place on a baking tray and bake on a medium heat, lightly fry in a shallow pan, or put in an air fryer for 5 minutes until the edges have browned.

  6. Enjoy.


What do I need?

You can (as with most of my recipes), make these as easy or complicated as you wish! I have created this recipe to be very quick and easy, but you can take your time and create burgers identical in size and shape if you wish!

Serving

You can serve these however you usually eat your burgers. You can put them in a fresh bread roll with salad, sauce and cheese, or eat them with your favourite side such as coleslaw, chips, rice or roasted vegetables.


Storage

These will store quite well, either in the fridge for up to five days or in the freezer for up to three months. If freezing, portion or separate with greaseproof paper, label and freeze. To reheat bake in the oven on a medium heat, or pop in the air fryer.

    Hi Laurena, I love mushrooms (luckily hubby does too lol). I’ll be making this sometime in the near future 🙂 I used to make mushroom burgers just by grilling a Portobello mushroom hehe.
