Delicious muffins made with store-cupboard ingredients!
Put the ground flaxseed in a glass, add the water and mix. Set aside.
In a large bowl, cream the butter and the sugar until well mixed.
Add the banana and vanilla and gently mix through.
Tip the flour into the bowl and add the baking powder, bicarbonate of soda and mixed spice. Gently fold this through until everything is incorporated.
Spoon the mixture into muffin cases (3/4 full) and bake at Gas Mark 5 (375f / 190c) for 20-25 minutes. They are cooked when a skewer inserted comes out clean.
