You’ll love these easy 3 ingredient cinnamon pastries

The pastry was not intended for this, but you’ll love these easy 3 ingredient cinnamon pastries! If you need a quick dessert or snack, or even breakfast, these are fantastic! These are crispy and flaky with a delicious delicately spiced soft filling. Perfect! Oh, and I made 25 of these and managed to nab 2! Yes! Only 2!!! Your go-to Recipe

I have made this simply with three ingredients. Ready rolled puff pastry (I used a light version); soft dates (the kind you store in the fridge) and cinnamon powder. That’s it! These ingredients should be easy to find! I often buy the pastry and freeze it (or buy frozen as several of the chilled ones contain alcohol?) You can use any dates, but if you can get the softest, fattest dates you can find, then these will be even easier to make! These were fabulous for me as I am currently avoiding refined sugars – instead you get a natural sweetness from the dates. Here’s the recipe:

Quick and easy 3 ingredient pastries.

Gather
  • 1 packet ready rolled puff pastry (mine was 375g)
  • 100g soft dates (de-stoned) (approx 10 dates)
  • 1-2 tablespoons boiling water if required to soften dates
  • 1.5-2 teaspoons ground cinnamon (depends on love of cinnamon)!
Prepare
  1. Remove the pastry from the packet and allow to come to room temperature (If you try and unroll the pastry while it is cold, it will likely crack… if you let the pastry get too hot it will become very sticky)!

  2. Preheat the oven to Gas Mark 7 (425f / 220c). Line 2 baking trays with a non-stick liner or baking paper.

  3. Put the dates in a bowl and mash with a fork. If needed, add a bit of boiling water to help make a smooth paste.

  4. Add the cinnamon and mix well (this will cause the mixture to firm up so add water first if needed)!

  5. Carefully unroll the pastry and spread the mixture all over the pastry.

  6. Starting from one of the long edges, roll the pastry over the cinnamon mixture towards the centre.

  7. Turn the pastry around (180 degrees), and repeat with the other long side until it meets the other pastry roll.

  8. With a pastry cutter or a sharp knife cut the roll into even slices about 1cm each, then place them spread out on a the baking trays. You can reshape them (to be identical) or leave them as they are. Slightly flatten them using your fingers so they are level and cook evenly.

  9. Bake at Gas Mark 7 (425f / 220c) for 10-15 minutes. They will start to go golden brown around the edges. Allow to cool for 5 minutes on the tray before removing to cool on a wire rack.

  10. Enjoy!

What do I need?

You should be able to make these with regular kitchen items you already have! However, if you are just venturing into baking or your kitchen equipment has seen better days, here are a few useful things for this recipe. How to serve your pastries

If you can, I would try and wait for these to cool down to allow the pastry to crisp up and the shapes to firm up. Eat with your favourite cuppa and your feet up! I ate mine just as it was, and the rest were devoured as they were, but if you want to, you could add some ice-cream, custard or whipped cream! I would serve this as a snack or a dessert, or even as a breakfast food! Feel free to drizzle these with icing or add a dusting of icing sugar!

Are the pastries easy to store?

These pastries keep best lightly covered at room temperature and will be good for at least a couple of days (if you can keep them for that long)! You can put them in an airtight container and they will keep a bit longer, but as with most fresh pastries they will become chewy and the taste will change. These can be frozen for up to 3 months (remember to wrap them individually, label and date) and they should defrost perfectly (maybe crisp them up in a warm oven).
