Chocolate Cake!

Chocolate Cake!

It’s been a while since I’ve posted a chocolate recipe and as I was playing in the kitchen this week and created this delicious light fluffy cake, I thought I’d share it with you! ๐Ÿ™‚ This would be perfect for Valentines Day, either as dessert or just to say ‘I love you’! ๐Ÿ™‚

Chocolate heart cake with handmade chocolate hearts

I was aiming for an egg free, dairy free cake and decided to experiment with aquafaba again. I’ve made several things using aquafaba but not cake. For those of you puzzling over aquafaba (where have you been!) it is the liquid from a can of chickpeas (or other beans) which you’d normally drain away! Yes, this gloopy liquid actually whisks up to resemble egg whites and in a cake it is perfect! ๐Ÿ™‚ I added apple cider vinegar to the whisked mixture, did a taste test and not a hint of chickpea flavourย remained! ๐Ÿ˜€ What I had was a fluffy white neutral tasting mix. A perfect base for a delicious light cake!

I’m sharing this cake over at Fiesta Friday where once again I am co-hosting! ๐Ÿ˜€ You really should come over and join us (if you’ve not come from there already!)ย The regulars areย a very friendly bunch who love to share their recipes and creations each week. The idea is that you write a new post, adding a link to Fiesta Friday, add two more links to the co-hosts for that week, then add your post link to the party. It is really easy to do! ๐Ÿ™‚

After you’ve added your link,ย you have a look and see what everyone else has made, hop around, click like, write a comment and have a chat. IF… IF you follow the rules, i.e. add all the three links, are visible at the party –ย e.g. answering comments, visiting others, writing on the main post etc., then you get the chance to be featured! ๐Ÿ˜€ That means that at the following weeks blog party, your post is highlighted with a comment for all to see! ๐Ÿ™‚ Winwin… more visitors, more backlinks, more exposure for you! Hooray!

This week I’m co-hosting (Laurena @ Life Diet Health) with the very talented Jhuls @ the not so creative cook If you’ve not been over to Jhuls’ blog, have a look, sheย makes the most delicious foods with great photos. ๐Ÿ˜€

Who wants a forkful of delicious chocolate cake with fresh raspberries and vanilla-raspberry icing?

So, check out this recipe, pin it, print it, share it or whatever you normally do ๐Ÿ™‚ write a comment, then hop over to Fiesta Friday! See you there! ๐Ÿ˜€

[recipe title=”Chocolate Cakeย (Vegan & Free-From)” servings=”3-4″ time=”25-35mins” difficulty=”medium”]

Gather

  • 100ml aquafaba (liquid from the tin of chickpeas)
  • 2 teaspoons apple cider vinegar
  • 50g coconut sugar
  • 50g coconut oil melted
  • 50g ground almonds
  • 100g plain flour (gluten free if required)
  • 2 tablespoons cacao powder (or flavoured cacao)
  • 2 teaspoons baking powder

Prepare

  1. Whisk the aquafaba until soft peaks form (trust me this works)! Add the apple cider vinegar and whisk until you have firm peaks.
  2. Check the coconut sugar is lump free then gently whisk into the aquafaba mix. You should end up with a golden coloured glossy mixture which leaves a ribbon trail when you lift the whisk.
  3. Pour the coconut oil into the mix, followed by the almonds, flour, cacao and baking powder. When all the ingredients are in the bowl carefully mix to combine (try to keep some of the fluffiness!)
  4. Spoon the mixture into a prepared shallow tin and using the back of a spatula spread it out evenly (without flattening the mix too much)!
  5. Bake at Gas Mark 5 (375f / 190c) for 12-15 minutes. Insert a skewer and if it comes our clean, it’s ready. Allow to cool in the tin for ten minutes before turning outย (you should see it pulling away from the sides of the tin).
  6. Enjoy!

Tips & Storage

  • Eat as it is!
  • Add your favourite icing in the middle or on top – buttercream, fondant, yogurt.
  • Serve with some fresh fruits – strawberries, blueberries, raspberries.
  • Drizzle with melted white chocolate.
  • Cut into shapes such as hearts before serving.
  • Sprinkle with flaked almonds or toasted coconut.
  • Use flavoured cacao such as orange, coffee, cinnamon.
  • Store covered for up to three days.

This vegan cake sounds super yummy, Laurena, at first I actually thought it was pancakes (my brain is so confused about the proximity of pancake day and valenitine’s day!) – I love the use of aquafaba in this recipe, I only ever used it to make vegan mayo. Thank you for co-hosting FF again! Enjoy your weekend:)

Thank you Monika. You know it was actually going to be a pancake post! I made a lovely caramelised banana pancake in preparation for pancake day but realised I only posted pancakes the other week! Aquafaba made this cake so light and fluffy… I’ve not used it for mayo yet, I’ll have to try that! I’m getting the hosting bug (& I had some free time)! Have a great weekend, x

I haven’t tried using aquafaba. Your post is inspiring me to try. I love chickpeas and you know that ๐Ÿ˜€ but I haven’t tried using its water aside from mixing with the peas for hummus. The cake looks so pretty, Laurena. Thanks for sharing the co-hosting duties with me. Happy Fiesta Friday!

Just like I introduce you to “new” things you do the same with me. Now I know what aquafaba is – it’s such a different ingredient for me in baking. Thanks for co-hosting Laurena – again ๐Ÿ™‚

You certainly learn about different cuisines and ingredients which I love being a former teacher/librarian. I have a separate area for just my Indian ingredients and maybe I can add this new item to my collection ๐Ÿ™‚ Like you I probably would not look at some posts but when I co-host I look at them all. I told Angie I want to back off being a co-host – the party needs new people and I have been around a long time.

Noooo we need you Judi! ๐Ÿ˜˜ It’s good to have familiar co-hosts as well as newbies and if you enjoy doing it and have time then why not!๐Ÿ˜€Besides… the newbies won’t know you’ve been here since the beginning ๐Ÿ˜‹
