Lentil Stuffed Aubergines from Istanbul

I had fun reading all your comments yesterday! πŸ™‚ and well done to Lisa at Basil and Oil who guessed my destination outright within a few minutes of posting! I am in the land of yummy foods! πŸ™‚ Where culture, religion and markets are a plenty. Where old meets new and East meets West. Hello (merhaba) from Istanbul, Turkey! πŸ™‚ So many amazing sights, sounds and smells here andΒ as forΒ foods… where do I start! Vegan street foods here are a plenty… boiled or chargrilled sweetcorn, roasted chestnuts or a variety of baked goods, the most popular being simit – a delicious sesame topped fluffy bread ring!

Aubergines feature a lot here and I’ve even seen the skins hanging up drying which was novel for me! I even had aubergine for breakfast! This food was from a restaurant in the touristy Sultanahmet area of Istanbul. The food is all on display in the window and you just select which ones you’d like, grab some bread and the waiter will carry the tray to the table for you. It’s great that you can see all the food… but some of the restaurants obviously have very old offerings so being able to see it prepared is a bonus! πŸ™‚ This dish can be made with or without meat, so for Life Diet Health I have of course chosen the meat free version, which is made with brown lentils. It was very yummy and I’ll be playing with the recipe when I get home!
